- If you have dried shitake mushrooms, pour boiling water over them and set aside for 10-15 minutes. Once the mushrooms absorb water, you can prepare the next ingredients
- Cut the onion, cucumber, radish, avocado, and cherry tomatoes into smaller pieces (I recommend cutting the radish, cucumber, and avocado into smaller strips. It will be easier to arrange the vegetables on the tortilla)
- Heat olive oil in a pan
- Place the onion in the heated pan. Fry the onion until it turns brown
- Add shitake mushrooms to the frying onion (the mushrooms can be cut with scissors)
- When the mushrooms and onion are lightly browned, add the eggs
- When the scrambled eggs are ready, add salt, pepper, turmeric, black cumin, and parsley (remember always to add turmeric with pepper!)
- Prepare the tortilla. Before adding the prepared ingredients, spread the tortilla with mayonnaise
- Then add avocado, scrambled eggs, cucumber, and radish. Wrap everything in a tortilla
- Place the prepared tortilla and cherry tomatoes on a plate
Tips
- I recommend wrapping the second half of the avocado (with the seed) in aluminum foil and placing it in the refrigerator. Then it will stay fresh longer
- If you want to reduce calories, do not add mayonnaise. Add half the portion of avocado specified in the recipe and make scrambled eggs with one egg
