Recipe

  1. Combine eggs with cottage cheese, pepper, salt, sesame seeds and turmeric. Mix everything together (you can break up the cottage cheese further with a fork).
  2. Heat olive oil in a pan. Pour the prepared mixture into the heated olive oil.
  3. In a separate pan, fry the Parma ham to obtain crispy chips.
  4. While the tortilla and ham are frying, prepare the vegetables – cut the avocado, tomato and cucumber.
  5. Place the prepared tortilla on a plate. Place avocado, tomatoes and Parmesan cheese on one side. Spread the other side with mayonnaise. Fold everything in half.
  6. Place the rest of the tomato and cucumber on the other side of the plate. Sprinkle the vegetables with salt and Provençal herbs.
