- Combine eggs with cottage cheese, pepper, salt, sesame seeds and turmeric. Mix everything together (you can break up the cottage cheese further with a fork).
- Heat olive oil in a pan. Pour the prepared mixture into the heated olive oil.
- In a separate pan, fry the Parma ham to obtain crispy chips.
- While the tortilla and ham are frying, prepare the vegetables – cut the avocado, tomato and cucumber.
- Place the prepared tortilla on a plate. Place avocado, tomatoes and Parmesan cheese on one side. Spread the other side with mayonnaise. Fold everything in half.
- Place the rest of the tomato and cucumber on the other side of the plate. Sprinkle the vegetables with salt and Provençal herbs.
