- If you use dried shitake mushrooms, first pour boiling water over them and set aside for around 10 minutes until they swell
- Heat a pan and heat the olive oil in it over low heat
- Cut the bread and heat the ready slices in a separate pan until golden brown (or bake in a toaster)
- Cut the onion into small pieces
- Cut the red pepper and pickled cucumber into long pieces (you can use cucumber insted of pickled cucubmer)
- When the shitake mushrooms are ready, cut them into small pieces (I use scissors for this purpose)
- Add shitake mushrooms and onion to a heated pan with olive oil
- When the onion turns brown, add eggs and spices (remember to always add turmeric with pepper so that it is better absorbed into the body!)
- Place spinach on a plate, followed by peppers, cherry tomatoes and cucumbers. Place the croutons next to it and top crounts with the prepared scrambled eggs
